Coffee cake


Aidan mentioned that they ate coffee cake on Word World this week, so he wanted to try and make some. We made a delicious pan this morning, and thought maybe we would share the recipe with you!


BUTTERMILK COFFEE CAKE
2 1/3 cup flour
2 cups brown sugar
1 stick butter
2 tsp cinnamon

Blend these together until they form a coarse, crumbly mixture. Set aside 2/3 cups for the topping.

To the remaining add:
1 tsp baking soda,
1 egg
1 cup buttermilk
1 tsp vanilla

Mix. Pour into greased 9 x 9. Bake in preheated oven at 350 degrees for approx. 45 minutes, or until inserted toothpick comes out clean. Delicious served warm, but it stays moist and tender enough to eat the next day. I also prefer to use half white flour, and half King Arthur White Wheat flour. Enjoy!
