Pancake recipe

I mentioned in my previous post that Aidan picked pancakes for his birthday meal. I would like to think that is because i make such wonderful pancakes, but i am sure it has more to do with the fact that he eats them doused in syrup. However, i have been told i make a mean pancake, and i credit the recipe to my dad. He used to make pancakes for us every Saturday morning, and eventually he passed that job on to me. He also passed his special recipe to me, and when i say "special" i mean it! This recipe is only in our heads, or at least that is what i have been told. For all i know he could have found it in a Betty Crocker cookbook, but i like to think it is just our secret recipe. Would you like to be in on the secret too?



Best Ever Pancakes


1 egg - beat until very light and frothy

add: 1 cup buttermilk

1/3 cup oil

1/4 cup sugar.

Mix


Add: 3/4 cup flour

1/4 cup cornmeal

2 1/2 tsp baking powder

1 tsp baking soda

dash salt


Mix the dry ingredients as little as possible. The batter will still be a little lumpy. This is fine, because if you keep mixing the batter your cakes with be flat and tough.


Cook on a preheated 375 degree griddle. The pancakes will really puff up, and you can turn them when the edges start to brown a little bit. It is also important to note you should only turn them ONE TIME if you want nice fluffy cakes. Honest. and don't even think about smashing them with your spatula! That is just wrong. This makes enough to feed 3-4 people, and the recipe can be doubled without problems.
