drinking hot chocolate. I know, it sounds crazy. But it is only 58 degrees right now and it's cold and damp and rainy. We had a church picnic tonight in the rain, and for some reason, against all common sense, we still decided to go. All I could think about the whole evening was going home and having some hot chocolate to warm me from the inside out. The sad part is, we didn't even have any, so I am drinking a concotion of malted milk and chocolate syrup and coffee and creamer and marshmallows. It will do for right now, but for those of you who love hot cocoa, I am going to post a great recipe my aunt gave me last year. This drink is so yummy you will become addicted to having it in your fridge and you might even find yourself taking random spoonfuls during the day. And if you happen to be a fan of Bailey's....... you get the idea, right?
Hot Chocolate Mix Recipe
2 1/2 ounces bittersweet chocolate
pinch of salt
1 c whipping cream
1/2 c water
2/3 c sugar
1 tsp vanilla
nutmeg
Melt chocolate and water and cook until dissolved and smooth. Add the salt and sugar and cook for 3-4 minutes more. Allow to cool. Whip the cream and vanilla together until stiff. Fold in the chocolate mixture and transfer to a covered container. Store in refrigerator. To make hot chocolate, place one heaping Tablespoon into one cup of hot milk. Whisk until smooth. Grate fresh nutmeg on top.
This mix tastes great in coffee in place of creamer. I also am a big fan of Mexican hot chocolate so sometimes I add a pinch of cinnamon and ancho pepper and skip the nutmeg. I have also added almond extract instead of vanilla. All delicious options!
